Yacon Helps to Lose Weight:
Yacon syrup has been studied in the obese and slightly dyslipidemic pre-menopausal woman. Yacon increased satiation and helped these women to lose weight and waist circumference, lower their cholesterol and other lipids that were slightly high, and improved digestion.

Studies of laboratory of sub-chronic ( up to 4 months) Yacon root consumption showed no variation in the levels of glucose in the blood, hypoglycemic activity, in normal rats and reduction of serum triacylglycerol levels after eating, post-prandial. There was ceratin beneficial metabolic activity and not toxicity.
Another study in Argentina in 2018, feeding mice a high-fat diet for 30 days, evaluated the effects of addition of yacon flour on the quality of goat milk yogurt and investigated the metabolic effects of its regular consumption on a high-fat diet.
The formula of yacon flour with goat milk showed higher nutritional values, less lactose, it tasted good, had more probiotic microorganisms and a shelf life of at least 30 days, increased prebiotic fructooligosacharides.
Supplementation of goat yogurt with yacon to a high-fat diet for 30 days, resulted in lower body weight, body mass index, fasting glucose levels, and lower atherogenic indices of rats. This shows evidence that goat yogurt + yacon is an excellent functional food that avoids the metabolic impact of high-fat feeding.
