Chicken Spring
(Aprox. 300 calories/cup, protein, Protein: 65gr)

Ingredients

2 TBS olive oil
1 clove of garlic smashed
2 medium tomatoes washed and cut in half inches cubes without 1eeds
2 medium red onions washed and cut in half inches cubes
½ tsp of SaltIngredients:
½ tsp of Cumin
1 whole chicken cut in six pieces
1 carrot peeled, washed and cut in round cubes
1 cup of green peas peeled and washed
1 cup of water

Preparation:

Pour some olive oil, garlic, tomatoes, onions, salt and cumin into a skillet.
Put on the skillet on the stove in a medium fire.
Stir fry onion and tomatoes until they are soft, (about ten minutes).
Add the chicken pieces, potatoes, carrots, and water, let it boil and lower the flame.
After ten minutes more, add the green peas. Close the lid.
Boil for about twenty minutes (until chicken is not red and carrots and potatoes are soft).
Take half a teaspoon of the mixture in a separate plate, let it cool and taste to see if it has enough salt. You can add a little bit more salt once you turn the off stove if you want.
Serve with 1/2 of cup of white rice.

Parboiled rice with chicken, peppers, cucurbita, peas and tomato

White Rice
(100 calories in ½ of cup, Protein: 2.2 gr)

2 cloves of garlic smashed
2 TSP olive oil
¼ tsp salt
1 cup of white rice
2 ½ cups of water

Preparation:

Add the olive oil to the skillet with the garlic, in medium fire for 5 minutes.
Let it cool for a few minutes and add the water and salt.
Bring back the mixture to boil in a medium fire.
Once boiling, lower the flame and add the rice carefully.
Close the lid and let it boil for 15 minutes in low fire until the rice is soft, the water is evaporated, and you can see some grains open.
Close the lid and let it cool for 10 minutes before you serve.
